Spring has arrived in the garden in all its glory, and everything is sprouting and blooming with fresh energy as we begin the new year. Our peas in the plastic tunnel have their first flowers and buds, so they’ll be producing sweet, fruity pea pods very soon.

Fresh lettuce, fennel, and spring onions were planted again. In addition, the irrigation system was re-laid and is now gradually being automated.

We received a shipment from the company Brantner received 10 metric tons of Bio-Ströck compost and 10 metric tons of wood chips. The compost serves as fertilizer for our vegetable beds. We use wood chips as a mulch layer on our perennial beds and to keep snails out of the plastic tunnel—since snails don’t like crawling over sharp surfaces.

Currently, a variety of fresh leafy greens, Asian salads, radishes, and flowers are delivered to the restaurants every week.

In the perennial beds, which we won’t plant until fall, we’ve grown a cover crop mixture of field beans and peas. It helps improve soil structure thanks to its strong root system, fixes nitrogen, and—once it blooms—looks great, too. You can then harvest the young shoots and mix them into a salad or stir-fry.
